Baked Egg in Avocado Cups
Here’s a healthy nutritious breakfast idea for you and quite possibly one of my all time favorites, as it keeps me feeling full for ages.
Ingredients:
- 1 large ripe Avocado (squeeze both ends of the avocado to check if ripe, if there soft then its ripe.
- 2 Eggs
- Coconut oil
- Chilli flakes to your taste
Method:
- Preheat oven to 200C.
- Slice avocado in half and remove stone.
- Use a spoon to scoop out a little more of the avocado, to make room for the egg. Place the avocado halves in a oven dish so they don’t roll around. You can slice a little from the avocado to give it a flat base to make them more stable. Crack an egg into each avocado half.
- Bake for 8-15 mins depending upon how well done you like your eggs.
- Sprinkle with chilli flakes and serve with green salad.
